Crunchy Peanut Butter Brigadeiros

I spent a lot of my professional pastry chef life making chocolate bon bons. Which means I spent a lot of my time making ganache centers that were creamy, decadent, and sweet. This recipe captures all of those attributes without any of the technical skill. Choose your own garnish to roll them in - I love the crunchy, salty exterior of this recipe! It rounds out the experience with a much needed crunch.

Crunchy Peanut Butter Brigadeiros

Ingredients

  • 1 tbsp Butter

  • 14 oz can Sweetened Condensed Milk

  • 1/4 cup Cocoa Powder

  • 1 tbsp Peanut Butter

  • 1/4 tsp Salt

  • 1/2 cup Candied Peanuts, chopped - or other garnish of your choice (sprinkles, chocolate curls, cocoa powder, etc.)

Directions

  1. Melt the butter, condensed milk, cocoa powder, peanut butter, and salt over low heat. Stir continuously until you can see the bottom of the pot for 2-3 seconds when dragging your spatula through it

  2. Pour on a greased plate and refrigerate for an hour

  3. Once it’s firm, roll into 2 teaspoon portions and roll over candied peanuts. Wet your hand while you roll to keep the chocolate from sticking to your hands, and to make beautiful spheres!
